Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1 cup fresh spinach chopped
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, garlic powder, Italian seasoning, salt, and black pepper. Add the chicken breasts and toss to coat evenly.
  3. Place the seasoned chicken breasts in a greased 9x13 inch baking dish.
  4. Scatter the halved cherry tomatoes and chopped spinach over the chicken.
  5. In a small bowl, mix the heavy cream, mozzarella cheese, and Parmesan cheese together. Pour this mixture evenly over the chicken and vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh basil leaves if desired.
