Lay the whole wheat tortillas flat on a clean surface.
In a small bowl, mix the mayonnaise and Dijon mustard together. Spread the mixture evenly over each tortilla.
Layer the sliced turkey breast evenly over the tortillas, leaving a small border around the edges.
Add the sliced avocado, fresh spinach, tomato slices, and shredded cheddar cheese on top of the turkey.
Season with salt and pepper to taste.
Starting from one edge, carefully roll the tortilla tightly around the fillings.
Slice each wrap in half diagonally and serve immediately or wrap in plastic wrap for later.
