Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Gently fold in the sliced strawberries.
Lightly grease the waffle iron with cooking spray or a small amount of oil. Pour an appropriate amount of batter onto the preheated waffle iron (usually about 1 cup, but check your iron’s instructions). Close the lid and cook until golden brown and crisp, usually about 5 minutes.
While the waffles are cooking, prepare the whipped cream. In a medium bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
Once the waffles are done, remove them from the iron and serve immediately topped with whipped cream and additional strawberries if desired.
