Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract for whipped cream

Method
 

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Gently fold in the sliced strawberries.
  6. Lightly grease the waffle iron with cooking spray or a small amount of oil. Pour an appropriate amount of batter onto the preheated waffle iron (usually about 1 cup, but check your iron’s instructions). Close the lid and cook until golden brown and crisp, usually about 5 minutes.
  7. While the waffles are cooking, prepare the whipped cream. In a medium bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  8. Once the waffles are done, remove them from the iron and serve immediately topped with whipped cream and additional strawberries if desired.
