- In a large mixing bowl, drain and flake the sardines with a fork. Add mayonnaise, mustard, scallions, celery, and capers. Zest the lemon and squeeze its juice into the bowl, then add parsley. Mix until well combined.
- Continue mixing until the salad is creamy yet chunky. Optionally, fold in chopped chili pepper for more heat. Set aside.
- Preheat your toaster. Toast the bread until golden, about 3-5 minutes.
- Assemble the sandwich by scooping a portion of sardine salad onto one slice of bread. Add optional toppings if desired, then place another slice of bread on top.
- Cut sandwich in half diagonally and serve with veggie sticks or a light salad.
