Preparation
  1. In a large mixing bowl, drain and flake the sardines with a fork. Add mayonnaise, mustard, scallions, celery, and capers. Zest the lemon and squeeze its juice into the bowl, then add parsley. Mix until well combined.
  2. Continue mixing until the salad is creamy yet chunky. Optionally, fold in chopped chili pepper for more heat. Set aside.
  3. Preheat your toaster. Toast the bread until golden, about 3-5 minutes.
  4. Assemble the sandwich by scooping a portion of sardine salad onto one slice of bread. Add optional toppings if desired, then place another slice of bread on top.
  5. Cut sandwich in half diagonally and serve with veggie sticks or a light salad.
