Method
 

Preparation Steps
  1. Thaw the cranberries by leaving them at room temperature for 30 minutes or microwaving for 15-20 seconds.
  2. Blend thawed cranberries with 2 tablespoons of fresh orange juice and orange zest until smooth. Measure out ⅔ cup for dough.
  3. Cream together unsalted butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add cranberry mixture to the butter-sugar mix and blend on low speed until smooth.
  5. Whisk together flour, baking powder, and salt in a separate bowl. Gradually add this dry mix to the wet ingredients.
  6. Fold in Craisins gently using a spatula.
  7. Cover dough and chill in the refrigerator for at least 30 minutes.
  8. Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
  9. Scoop dough, roll into balls, and coat with granulated sugar before placing on baking sheets.
  10. Bake for 8-10 minutes until edges are golden and centers are soft. Allow cookies to cool on sheets before transferring to wire racks.
  11. Cool completely on wire racks before serving.
