Preparation Steps
- Thaw the cranberries by leaving them at room temperature for 30 minutes or microwaving for 15-20 seconds.
- Blend thawed cranberries with 2 tablespoons of fresh orange juice and orange zest until smooth. Measure out ⅔ cup for dough.
- Cream together unsalted butter and granulated sugar until light and fluffy (about 3-4 minutes).
- Add cranberry mixture to the butter-sugar mix and blend on low speed until smooth.
- Whisk together flour, baking powder, and salt in a separate bowl. Gradually add this dry mix to the wet ingredients.
- Fold in Craisins gently using a spatula.
- Cover dough and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
- Scoop dough, roll into balls, and coat with granulated sugar before placing on baking sheets.
- Bake for 8-10 minutes until edges are golden and centers are soft. Allow cookies to cool on sheets before transferring to wire racks.
- Cool completely on wire racks before serving.
