Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • 1/2 cup ranch dressing or Greek yogurt

Method
 

  1. In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, avocado, cheddar cheese, cilantro, lime juice, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. Lay out the whole wheat tortillas on a clean surface.
  3. Evenly distribute the chicken mixture onto the center of each tortilla, leaving some space around the edges.
  4. Drizzle ranch dressing or Greek yogurt over the chicken mixture on each tortilla.
  5. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.
  6. Slice each wrap in half diagonally and serve immediately, or wrap in foil for later.
