- Start by taking an 8 oz loaf of ciabatta and making a horizontal cut through the middle, splitting it into two halves. Place the bottom half on a clean cutting board and drizzle a light coating of olive oil over it.
- Next, generously spread 1/4 cup of olive tapenade evenly on both halves of the ciabatta.
- On the bottom half of the bread, layer the fillings: sprinkle 1 oz of crumbled goat cheese, followed by thinly sliced tomatoes, 1 cup of shredded roast chicken, 1/4 cup of sliced pepperoncini and 2 oz of arugula.
- Carefully place the top half of the ciabatta over the layered fillings. Press down gently to help all the ingredients meld together.
- Wrap the entire sandwich tightly in plastic wrap. Place a heavy object on top and let it sit at room temperature for at least 1 hour, or refrigerate overnight.
- Once pressed, remove the plastic wrap and slice the sandwich into equal portions.
