Step‑by‑Step Instructions
  1. Start by taking an 8 oz loaf of ciabatta and making a horizontal cut through the middle, splitting it into two halves. Place the bottom half on a clean cutting board and drizzle a light coating of olive oil over it.
  2. Next, generously spread 1/4 cup of olive tapenade evenly on both halves of the ciabatta.
  3. On the bottom half of the bread, layer the fillings: sprinkle 1 oz of crumbled goat cheese, followed by thinly sliced tomatoes, 1 cup of shredded roast chicken, 1/4 cup of sliced pepperoncini and 2 oz of arugula.
  4. Carefully place the top half of the ciabatta over the layered fillings. Press down gently to help all the ingredients meld together.
  5. Wrap the entire sandwich tightly in plastic wrap. Place a heavy object on top and let it sit at room temperature for at least 1 hour, or refrigerate overnight.
