  • 1 cup Apple Cider For deglazing
  • 1 cup Heavy Cream Or coconut cream as a dairy alternative
  • 2 tablespoons Butter For sautéing
  • 1 tablespoon Fresh Thyme Chopped, fresh is best
  • 1 pinch Nutmeg Optional
  • to taste Salt
  • to taste Pepper

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt and pepper. In a skillet, melt butter over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes until golden brown, then flip and sear for another 4-5 minutes. Remove from skillet.
  3. In the same skillet, add diced onion and sauté until soft, about 3-4 minutes. Add sliced mushrooms and diced apples, cooking for about 5 minutes until caramelized.
  4. Pour apple cider into the skillet, scraping up brown bits. Let simmer for 2 minutes, then stir in heavy cream and nutmeg, seasoning with salt and pepper to taste.
  5. Return the chicken to the skillet, nestling it into the sauce. Sprinkle thyme on top. Transfer to the oven and bake uncovered for 30-35 minutes until chicken reaches 165°F (74°C).
  6. Let the casserole rest for a few minutes. Garnish with fresh chopped parsley before serving alongside crusty bread or mashed potatoes.
