Step-by-Step Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs with salt and pepper. In a skillet, melt butter over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes until golden brown, then flip and sear for another 4-5 minutes. Remove from skillet.
- In the same skillet, add diced onion and sauté until soft, about 3-4 minutes. Add sliced mushrooms and diced apples, cooking for about 5 minutes until caramelized.
- Pour apple cider into the skillet, scraping up brown bits. Let simmer for 2 minutes, then stir in heavy cream and nutmeg, seasoning with salt and pepper to taste.
- Return the chicken to the skillet, nestling it into the sauce. Sprinkle thyme on top. Transfer to the oven and bake uncovered for 30-35 minutes until chicken reaches 165°F (74°C).
- Let the casserole rest for a few minutes. Garnish with fresh chopped parsley before serving alongside crusty bread or mashed potatoes.

Notes
For best flavor, ensure a nice golden crust on the chicken and use tart apples to balance sweetness.
