- Fill a large pot with water, adding a pinch of salt. Bring to a boil and cook spaghetti until al dente, about 8-10 minutes.
- In a large skillet or wok, heat oil over medium-high heat. Add ground beef, breaking it into pieces. Cook for 5-7 minutes until browned.
- Reduce heat to medium. Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
- Add soy sauce, chili oil, brown sugar, and rice vinegar to the beef. Simmer for 2-3 minutes until thickened.
- Combine drained spaghetti with the sauce in the skillet. Toss together for about 2 minutes, adding reserved pasta water if needed.
- Turn off the heat. Drizzle with sesame oil, add green onions and sesame seeds, and toss gently.
- Plate and serve while hot, with extra chili oil if desired.
