  • 1/2 cup powdered sugar

  • 1/4 teaspoon salt
  • 1/2 cup shelled pistachios finely chopped
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon optional
  • Graham cracker crumbs for rolling optional

Method
 

  1. In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and salt. Mix until smooth and creamy.
  2. If using, add the cinnamon and mix until well incorporated.
  3. Using a small cookie scoop or your hands, form the ricotta mixture into bite-sized balls, about 1 inch in diameter.
  4. Roll each ball in the finely chopped pistachios until fully coated.
  5. Drizzle honey over the pistachio-coated bites or serve honey on the side for dipping.
  6. If desired, roll some of the bites in graham cracker crumbs for added texture.
  7. Place the bites on a serving platter and refrigerate for at least 30 minutes to firm up before serving.
