If using, add the cinnamon and mix until well incorporated.
Using a small cookie scoop or your hands, form the ricotta mixture into bite-sized balls, about 1 inch in diameter.
Roll each ball in the finely chopped pistachios until fully coated.
Drizzle honey over the pistachio-coated bites or serve honey on the side for dipping.
If desired, roll some of the bites in graham cracker crumbs for added texture.
Place the bites on a serving platter and refrigerate for at least 30 minutes to firm up before serving.
