Ingredients
  

  • 2 cups vanilla ice cream
  • 1 cup coconut milk
  • 1 cup fresh pineapple chunks or canned, drained
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon shredded coconut optional, for garnish
  • Maraschino cherries optional, for garnish

Method
 

  1. In a blender, combine the vanilla ice cream, coconut milk, fresh pineapple chunks, and vanilla extract.
  2. Blend on high speed until smooth and creamy, about 30-60 seconds.
  3. If the mixture is too thick, add a little more coconut milk to reach your desired consistency.
  4. Pour the milkshake into tall glasses.
  5. If desired, sprinkle shredded coconut on top and add a maraschino cherry for garnish.
  6. Serve immediately with a straw or a spoon.
