- In a blender, combine the vanilla ice cream, coconut milk, fresh pineapple chunks, and vanilla extract.
- Blend on high speed until smooth and creamy, about 30-60 seconds.
- If the mixture is too thick, add a little more coconut milk to reach your desired consistency.
- Pour the milkshake into tall glasses.
- If desired, sprinkle shredded coconut on top and add a maraschino cherry for garnish.
