Ingredients
  

  • 2 cups fresh strawberries hulled and sliced
  • 2 cups fresh blueberries
  • 2 cups fresh pineapple diced
  • 2 cups fresh watermelon cubed
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup honey
  • 1/4 cup fresh lime juice about 2 limes
  • Zest of 1 lime

Method
 

  1. In a large mixing bowl, combine the strawberries, blueberries, pineapple, watermelon, and chopped mint leaves. Gently toss the fruit together to mix.
  2. In a small bowl, whisk together the honey, lime juice, and lime zest until well combined.
  3. Pour the honey-lime dressing over the fruit salad and gently toss to coat all the fruit evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled, garnished with additional mint leaves if desired.
