Method
 

Step-by-Step Instructions
  1. Preheat your oven to 160°C (325°F) and grease the Financier pan.
  2. Brown the unsalted butter in a saucepan over low heat for 5-8 minutes.
  3. Sift together the plain flour, almond meal, icing sugar, and salt in a mixing bowl.
  4. Whisk the room-temperature egg whites until slightly bubbly, then fold into the dry ingredients.
  5. Fold in the slightly cooled brown butter and vanilla extract until just combined.
  6. Fill each cavity of the prepared Financier pan about three-quarters full with the batter.
  7. Bake for 12 to 14 minutes until lightly golden and springy to touch.
  8. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
