In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Gently fold in the cooked sausage, maple syrup, and shredded cheese until evenly distributed.
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.
Pour about 2 tablespoons of batter onto the skillet for each bite. Cook for 2-3 minutes or until bubbles form on the surface and the edges look set.
Flip and cook for an additional 1-2 minutes until golden brown and cooked through.
Remove from the skillet and keep warm while you repeat with the remaining batter.
Serve warm with extra maple syrup for dipping.
