Method
- In a medium bowl, combine rolled oats, milk, maple syrup, vanilla extract, and salt. Stir until well mixed.
- Add chopped walnuts and ground cinnamon (if using) to the mixture and stir again.
- Divide the oat mixture evenly into two jars or containers with lids.
- Seal the jars and refrigerate overnight (or at least 4 hours) to allow the oats to soak and soften.
- In the morning, give the oats a good stir. Top with fresh fruit before serving.
