Preparation
- Preheat the oven to 325°F (163°C).
- Crush graham crackers into fine crumbs and combine with melted butter and sugar. Press into a 9-inch springform pan.
- Beat softened cream cheese in a bowl until smooth. Gradually mix in sugar, then add eggs one at a time. Blend in sour cream, butterscotch sauce, and vanilla extract until smooth.
- Pour the filling over the crust and spread evenly. Bake for 45 to 60 minutes until the edges are set.
- Turn off the oven and crack the door open. Allow the cheesecake to cool inside for about an hour, then refrigerate for at least 4 hours or overnight.
- Carefully remove from the springform pan. Top with whipped cream and drizzle with butterscotch sauce. Slice and serve.
