Preparation
  1. Preheat the oven to 325°F (163°C).
  2. Crush graham crackers into fine crumbs and combine with melted butter and sugar. Press into a 9-inch springform pan.
  3. Beat softened cream cheese in a bowl until smooth. Gradually mix in sugar, then add eggs one at a time. Blend in sour cream, butterscotch sauce, and vanilla extract until smooth.
  4. Pour the filling over the crust and spread evenly. Bake for 45 to 60 minutes until the edges are set.
  5. Turn off the oven and crack the door open. Allow the cheesecake to cool inside for about an hour, then refrigerate for at least 4 hours or overnight.
  6. Carefully remove from the springform pan. Top with whipped cream and drizzle with butterscotch sauce. Slice and serve.
