  • 2 large russet potatoes
  • 4 cups vegetable oil for frying

  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 teaspoon garlic powder

Method
 

  1. Begin by washing and peeling the russet potatoes. Cut them into thin strips to create fries.
  2. Rinse the cut fries in cold water to remove excess starch, then pat them dry with paper towels.
  3. In a large pot or deep fryer, heat the vegetable oil to 350°F. Carefully add the fries in batches, frying them for about 5-7 minutes or until golden brown and crispy.
  4. Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Season with salt and black pepper while they are still hot.
  5. Preheat your oven to 400°F. Spread the fries on a baking sheet and sprinkle the shredded cheddar cheese and crumbled bacon evenly over the top.
  6. Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and drizzle with sour cream. Top with chopped green onions and a sprinkle of garlic powder.
