Preparation Steps
- In a medium bowl, combine 1/2 cup of chia seeds with 2 cups of your chosen liquid. Blend thoroughly using a whisk.
- Stir in 1/4 cup of maple syrup or honey, the zest of one lemon, and the juice from that same lemon. Add 1 teaspoon of vanilla extract as optional.
- Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Once thickened, give it a stir to regain creaminess. Add a splash of milk if needed.
- Serve in bowls and top with fresh berries, lemon zest, or Greek yogurt.
