  2. In a mixing bowl, whisk together 1 cup of all-purpose flour and a pinch of salt.
  3. In a large mixing bowl, cream together ½ cup of softened unsalted butter and 1 cup of granulated sugar.
  4. Add 2 large eggs into the mixture, one at a time, mixing well after each.
  5. Gently fold in 2 tablespoons of lemon zest, ¼ cup of fresh lemon juice, and 1 teaspoon of vanilla extract.
