Ingredients
  

  • 8 ounces of whole wheat pasta like penne or fusilli
  • 4 cups of fresh arugula washed and dried
  • 1 cup of cherry tomatoes halved
  • 1/2 cup of feta cheese crumbled
  • 1/4 cup of extra virgin olive oil
  • 1/4 cup of fresh lemon juice about 2 lemons
  • 2 cloves of garlic minced
  • 1 teaspoon of honey
  • Salt and pepper to taste
  • 1/4 teaspoon of red pepper flakes optional

Method
 

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooked pasta, arugula, cherry tomatoes, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, honey, salt, pepper, and red pepper flakes (if using) until well combined.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  5. Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 15-30 minutes for a refreshing taste.
