  2. Pour the egg mixture through a fine sieve into another bowl to achieve a velvety consistency.

  4. Transfer the strained egg mixture into a heatproof bowl, filling it about ¾ full.
  5. Steam the egg mixture for 15-20 minutes over medium heat.
