  • 1 cup Pickling Cucumbers Sliced
  • 1 cup Fresh Raw Vegetables Carrots, radishes, leafy greens, Asian pear; any combination.

Step-by-Step Instructions
  1. Bring a large pot of water to a rolling boil over high heat. Add round noodles and cook according to the package instructions, usually around 4-6 minutes, until they reach an al dente texture. Stir occasionally to prevent sticking. Once cooked, drain the noodles in a colander.
  2. After draining, rinse the cooked noodles under cold running water for about 2–3 minutes. This stops the cooking process and cools them down perfectly.
  3. In a small bowl, combine gochujang, sugar, vinegar, sesame oil, and garlic. Whisk until smooth and adjust seasoning as needed.
  4. In a large serving bowl, place a generous portion of your chilled noodles as a base. Layer on your choice of fresh raw vegetables, and drizzle the homemade gochujang sauce over the top.
  5. Serve cold for the best flavor and texture, or refrigerate for up to 30 minutes before serving.
