In a large bowl, combine the diced peaches, jalapeños, honey, soy sauce, olive oil, garlic, ground ginger, black pepper, and salt. Mix well to create the marinade.
Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
Place the marinated chicken thighs in a baking dish, pouring any remaining marinade over the top.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let the chicken rest for 5 minutes before slicing.
Garnish with fresh cilantro before serving.
