  • 2 pounds boneless skinless chicken thighs
  • 1 cup fresh peaches diced
  • 1/2 cup jalapeños finely chopped (seeds removed for less heat)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh cilantro chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced peaches, jalapeños, honey, soy sauce, olive oil, garlic, ground ginger, black pepper, and salt. Mix well to create the marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. Place the marinated chicken thighs in a baking dish, pouring any remaining marinade over the top.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Remove from the oven and let the chicken rest for 5 minutes before slicing.
  7. Garnish with fresh cilantro before serving.
