Method
 

Step-by-Step Instructions
  1. In a large bowl, combine warm water, active dried yeast, cinnamon, extra virgin olive oil, and salt. Gradually add strong white bread flour while stirring until a rough dough forms. Cover with a towel and let rest for 30 minutes.
  2. Turn the dough onto a floured surface. Stretch and fold the dough over itself three times to create tension. Shape into a ball and return to the bowl. Cover and let rise in a warm spot for about 1.5 hours.
  3. Prepare your baking tray by lining it with parchment paper and drizzling olive oil to prevent sticking. Transfer the dough to the oiled tray, folding sides in neatly. Cover and let rise for another 2 hours.
  4. Preheat your oven to 400°F (200°C) about 30 minutes before baking.
  5. After the second rise, dimple the surface of the dough and add desired toppings. Drizzle with more olive oil.
  6. Sprinkle with flaky sea salt and bake for 25-30 minutes until golden brown and hollow-sounding when tapped. Let cool for 10 minutes before slicing.
