- Start by preheating a skillet over medium heat. Brush both sides of thick slices of sourdough bread with olive oil. Toast for 2–3 minutes on each side until golden brown.
- In a mixing bowl, combine fresh whole-milk ricotta cheese with wildflower honey, lemon zest, and cinnamon. Stir until smooth and glossy.
- Lay toasted sourdough slices on a serving platter and spread the ricotta mixture on each slice. Layer sliced ripe pears over the ricotta.
- Sprinkle flaky sea salt over each toast and optionally top with chopped pistachios and mint leaves. Serve warm.
