  2. In a mixing bowl, combine fresh whole-milk ricotta cheese with wildflower honey, lemon zest, and cinnamon. Stir until smooth and glossy.
  3. Lay toasted sourdough slices on a serving platter and spread the ricotta mixture on each slice. Layer sliced ripe pears over the ricotta.
  4. Sprinkle flaky sea salt over each toast and optionally top with chopped pistachios and mint leaves. Serve warm.
