Step-by-Step Instructions
  1. Heat a large skillet or deep pan over medium heat and pat the boneless, skinless chicken dry. Season generously with garlic powder, onion powder, smoked paprika, salt, and pepper. Add a splash of oil and sear the chicken for 3-4 minutes on each side until golden brown, then transfer it to a plate.
  2. In the same skillet, add the uncooked long-grain rice, stirring often for about 1-2 minutes until it becomes slightly golden and fragrant.
  3. Pour the chicken broth into the skillet with the toasted rice, then stir in the BBQ sauce and honey until well combined.
  4. Carefully nestle the seared chicken back into the rice and sauce mixture.
  5. Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes.
  6. Sprinkle the mixed vegetables on top of the rice and re-cover the skillet. Cook for an additional 5 minutes.
  7. Remove Honey BBQ Chicken Rice from heat and let it sit, covered, for about 5 minutes.
