Step-by-Step Instructions
- Heat a large skillet or deep pan over medium heat and pat the boneless, skinless chicken dry. Season generously with garlic powder, onion powder, smoked paprika, salt, and pepper. Add a splash of oil and sear the chicken for 3-4 minutes on each side until golden brown, then transfer it to a plate.
- In the same skillet, add the uncooked long-grain rice, stirring often for about 1-2 minutes until it becomes slightly golden and fragrant.
- Pour the chicken broth into the skillet with the toasted rice, then stir in the BBQ sauce and honey until well combined.
- Carefully nestle the seared chicken back into the rice and sauce mixture.
- Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes.
- Sprinkle the mixed vegetables on top of the rice and re-cover the skillet. Cook for an additional 5 minutes.
- Remove Honey BBQ Chicken Rice from heat and let it sit, covered, for about 5 minutes.
- Garnish your Honey BBQ Chicken Rice with freshly chopped green onions or parsley and serve warm.
