Ingredients
  

  • 2 medium zucchinis sliced into half-moons
  • 1 medium yellow onion sliced
  • 1 red bell pepper sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 green onions chopped (for garnish)
  • Sesame seeds for garnish

Method
 

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced onions and bell pepper to the skillet. Stir-fry for about 3-4 minutes until they start to soften.
  3. Add the minced garlic and ground ginger to the skillet, stirring constantly for about 30 seconds until fragrant.
  4. Add the sliced zucchini to the skillet and continue to stir-fry for another 5-7 minutes until the zucchini is tender but still crisp.
  5. Pour the soy sauce and sesame oil over the vegetables, stirring to combine. Season with salt and pepper to taste.
  6. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
