  • 14 ounces Crushed/chopped tomatoes provides acidity and moisture

  • 0.5 cup Beef stock homemade is best
  • 0.5 cup Red wine for complex flavors
For the Finish
  • 2 tablespoons Flat leaf parsley chopped for garnish

Method
 

Step-by-Step Instructions
  1. Brown the beef in olive oil in batches over medium-high heat for 5-7 minutes until golden brown, then set aside.
  2. Sauté shallots/onions with granulated sugar over medium heat for 5 minutes until softened.
  3. Add garlic, bay leaf, cinnamon stick, salt, ground cloves, and ground pepper; cook for 2-3 minutes.
  4. Combine crushed tomatoes, tomato paste, beef stock, and red wine; add browned beef and simmer.
  5. Cook in Instant Pot for 45 mins on high; on stovetop for 1.5-2 hours; or in slow cooker for 5-8 hours.
  6. Finish by stirring in parsley and adjust seasoning before serving.
