  • 1 ripe avocado sliced
  • 1 medium tomato sliced
  • 1 cup fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. Start by toasting the whole grain bread slices until golden brown and crispy.
  2. In a small bowl, mix the olive oil and balsamic vinegar. Drizzle this mixture over the spinach and toss to coat evenly.
  3. On one slice of toasted bread, layer the Havarti cheese, followed by the avocado slices, tomato slices, and the dressed spinach.
  4. Season with salt and pepper to taste.
  5. Top with the second slice of toasted bread. If desired, you can press down gently to help the sandwich hold together.
  6. Cut the sandwich in half and serve immediately.
