Preparation
- Preheat your oven to 350°F (175°C) and prepare a water bath with hot water in a large baking pan.
- Soften the cream cheese at room temperature for 15-20 minutes.
- If using a crust, mix the crust ingredients in a 9-inch springform pan and press into the bottom.
- Blend the softened cream cheese, Greek yogurt, protein powder, sweetener, and vanilla extract in a food processor until smooth.
- Pour the filling over the prepared crust and smooth the top with a spatula.
- Bake for 30 minutes without opening the oven door until edges are set and center jiggles slightly.
- Turn off the oven and let the cheesecake sit inside for 5 more minutes.
- Allow to cool on the counter for 20 minutes, then refrigerate for at least 6 hours or overnight.
