  • 1 pound large shrimp peeled and deveined
  • 1 medium pineapple peeled, cored, and cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together the olive oil, soy sauce, honey, minced garlic, ground ginger, salt, and black pepper.
  3. Add the shrimp to the marinade and toss to coat. Let it marinate for 15-30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated shrimp, pineapple cubes, and bell pepper pieces onto the skewers, alternating between shrimp and vegetables.
  6. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
  7. Remove from the grill and serve immediately.
