Ingredients
  

  • 8 ounces halloumi cheese cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 small red onion cut into wedges
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Wooden or metal skewers

Method
 

  1. In a bowl, combine olive oil, lemon juice, dried thyme, salt, and pepper.
  2. Add halloumi cubes, bell peppers, and onion wedges to the bowl, tossing to coat evenly.
  3. Let marinate for 15-30 minutes.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated halloumi and vegetables onto the skewers, alternating between cheese and veggies.
  7. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the halloumi is golden brown and the vegetables are tender.
  8. Remove from the grill and let cool for a minute before serving.
