Step-by-Step Instructions
  1. Melt the butter or coconut oil in a medium-sized pot over medium heat for about 1 minute until fully melted.
  2. Add one diced onion and 3 minced garlic cloves, stirring frequently for 1-2 minutes until the onion is translucent.
  3. Sprinkle in 1 teaspoon of turmeric powder and stir well, cooking for another 30 seconds.
  4. Add 1 cup of rinsed basmati rice, stirring continuously for about 2 minutes until the rice is coated.
  5. Pour in 2 cups of chicken or vegetable stock, season with salt and black pepper, then bring to a boil.
  6. Once boiling, cover the pot, reduce to low heat, and let it simmer for 15 minutes without lifting the lid.
  7. After 15 minutes, turn off the heat and let the rice sit covered for an additional 5 minutes.
  8. Remove the lid and fluff the rice with a fork; garnish if desired before serving.
