Step-by-Step Instructions
  1. In a medium saucepan, combine fresh blackberries, granulated sugar, and a splash of lemon juice on medium heat. Stir gently for 5-7 minutes until thickened. Let cool.
  2. In a mixing bowl, beat softened cream cheese and granulated sugar together until smooth. Fold in vanilla extract, whipped topping, and graham cracker crumbs. Add half of the cooled blackberry swirl.
  3. Scoop portions of the cheesecake mixture into balls, insert lollipop sticks, and freeze for at least 1 hour.
  4. Melt dark chocolate wafers in the microwave. Dip each pop in chocolate and sprinkle with decorations immediately.
  5. Place decorated pops back in the fridge for 15-20 minutes to set. Drizzle any remaining blackberry swirl before serving.
