- In a medium saucepan, combine fresh blackberries, granulated sugar, and a splash of lemon juice on medium heat. Stir gently for 5-7 minutes until thickened. Let cool.
- In a mixing bowl, beat softened cream cheese and granulated sugar together until smooth. Fold in vanilla extract, whipped topping, and graham cracker crumbs. Add half of the cooled blackberry swirl.
- Scoop portions of the cheesecake mixture into balls, insert lollipop sticks, and freeze for at least 1 hour.
- Melt dark chocolate wafers in the microwave. Dip each pop in chocolate and sprinkle with decorations immediately.
- Place decorated pops back in the fridge for 15-20 minutes to set. Drizzle any remaining blackberry swirl before serving.
