Step-by-Step Instructions for Easy Mushroom Bourguignon
  1. Begin by preheating your oven to 190°C (Gas Mark 5 / 375°F). Gather your ingredients and prepare the vegetables.
  2. Peel the baby onions and top and tail the baby carrots, keeping the onions whole.
  3. In a large pan, heat oil over medium heat. Add mushrooms, baby carrots, and whole onions. Sauté for 5–10 minutes.
  4. Stir in the minced garlic and continue to sauté for an additional 2 minutes.
  5. Pour in red wine and bring the mixture to a gentle simmer, stirring well.
  6. Stir in the tomato puree, fresh thyme, bay leaves, and vegetable stock, then season with black pepper.
  7. Transfer the mixture to an oven-safe casserole dish. Cover and bake for about 40 minutes.
  8. Remove from the oven, let cool slightly, and serve hot.
