Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 1 pound Irish sausage or any good-quality sausage, cut into 1-inch pieces
  • 1 pound potatoes peeled and diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup chopped fresh parsley

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the sausage pieces to the pot and cook until browned on all sides, about 5-7 minutes.
  5. Stir in the diced potatoes, chicken broth, thyme, bay leaf, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and cover.
  7. Simmer for 30-40 minutes, or until the potatoes are tender.
  8. Remove the bay leaf and stir in the chopped parsley just before serving.
  9. Adjust seasoning if needed.
  10. Serve hot with crusty bread on the side for dipping.
