Ingredients
  

For the Batter
  • 2 oz Butter softened, unsalted recommended
  • 4 oz Granulated Sugar substitute with coconut sugar for a deeper flavor
  • 1 large Egg at room temperature
  • ½ teaspoon Vanilla Extract pure vanilla recommended
  • ¼ teaspoon Ground Cardamom freshly ground preferred
  • ½ cup Whole Milk at room temperature, use almond milk for dairy-free
  • ¾ cup All-Purpose Flour gluten-free flour can be used
For the Filling
  • 8 floz Heavy Whipping Cream coconut cream is a good dairy-free substitute
  • 1 tablespoon Powdered Sugar
  • Berries optional, like raspberries or blueberries

Method
 

Krumkake Cooking Steps
  1. Preheat your krumkake or pizzelle iron on medium heat for approximately 5 minutes.
  2. Beat together butter and sugar until light and fluffy, about 2-3 minutes.
  3. Incorporate egg, vanilla extract, and ground cardamom into the mixture and blend for about 1 minute.
  4. Pour in the milk and stir gently until the mixture is smooth.
  5. Sift in all-purpose flour and fold gently until the batter is smooth and lump-free.
  6. Scoop about 1 ½ tablespoons of batter onto the center of the iron and cook for 2-3 minutes until golden brown.
  7. Remove Krumkake from the iron and wrap it around a cone mold until it cools.
  8. Whip the heavy cream with powdered sugar until soft peaks form, about 3-4 minutes.
  9. Fill the cooled Krumkake with whipped cream and top with berries.
  10. Store any unfilled Krumkake in an airtight container at room temperature for up to 3 days.
