Ingredients
  

For the Shrimp
  • 1 lb Raw Shrimp Peeled and deveined
  • 1 tsp Garlic Powder
  • 1 tbsp Curry Powder Betapac or Montego recommended
  • to taste Salt
  • to taste Black Pepper
For the Sauce
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1 can Coconut Milk Full fat recommended
  • 1 tbsp Cornstarch To thicken the sauce
  • 1/4 cup Cold Water For mixing with cornstarch
For the Vegetables
  • 1 medium Yellow Onion Finely chopped
  • 1 cup Green Bell Pepper Chopped
  • 1 cup Red Bell Pepper Chopped
  • 2 stalks Escallion (Green Onion) Sliced thin
  • 2 cloves Garlic Minced
  • 2 sprigs Fresh Thyme
  • 1 piece Scotch Bonnet Pepper Chopped or whole for heat
Optional Touch
  • 1 tbsp Ketchup For additional sweetness if desired

Method
 

Step-by-Step Instructions
  1. Rinse and pat the raw shrimp dry with paper towels. Season the shrimp with garlic powder, curry powder, black pepper, and salt. Set aside.
  2. In a large saucepan, heat olive oil and butter over medium-high heat. Add curry powder and stir for about one minute to enhance flavor.
  3. Stir in chopped bell peppers, onion, and minced garlic. Sauté for 4-5 minutes until softened.
  4. Sprinkle in fresh thyme and scotch bonnet pepper. Sauté for an additional minute.
  5. Pour in coconut milk and season with salt and pepper. Simmer for about 5 minutes until thickened.
  6. Add seasoned shrimp to the sauce and cook for 2-3 minutes until shrimp are pink and opaque.
  7. If the sauce needs thickening, mix cornstarch with cold water and stir this mixture into the sauce. Simmer until desired consistency.
  8. Serve hot over steamed rice or with warm bread.
