- Rinse and pat the raw shrimp dry with paper towels. Season the shrimp with garlic powder, curry powder, black pepper, and salt. Set aside.
- In a large saucepan, heat olive oil and butter over medium-high heat. Add curry powder and stir for about one minute to enhance flavor.
- Stir in chopped bell peppers, onion, and minced garlic. Sauté for 4-5 minutes until softened.
- Sprinkle in fresh thyme and scotch bonnet pepper. Sauté for an additional minute.
