Step-by-Step Instructions
  1. Make the Marinade: Combine soy sauce, honey, peanut butter, rice vinegar, grated ginger, minced garlic, ground cumin, and ground coriander. Whisk until smooth.
  2. Marinate the Chicken: Place chicken in a bowl or zip-top bag. Pour the marinade over it, seal or cover, and refrigerate for at least 2 hours or overnight.
  3. Preheat the Grill or Oven: Preheat grill to medium-high (400°F) or oven to 400°F (200°C).
  4. Grill or Roast the Chicken: Grill thighs skin-side down for 6-8 minutes per side, or roast for 35-40 minutes, basting with marinade and checking for doneness.
