Method
 

Step-by-Step Instructions
  1. Cream together the unsalted butter and sugar until light and fluffy, about 3-4 minutes.
  2. Whisk together gluten-free flour blend, baking powder, baking soda, and salt in a separate bowl.
  3. Gradually add the dry ingredients into the butter-sugar mixture, then mix in egg whites and vanilla extract, adding milk to reach a pipeable consistency.
  4. Preheat oven to 350°F (175°C). Pipe small rounds onto a lined baking sheet.
  5. Bake for 10-12 minutes, or until lightly golden around the edges.
  6. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
