- In a large mixing bowl, combine minced shrimp, chopped green onion, egg white, cornstarch, cooking rice wine, salt, and pepper. Mix until well incorporated.
- Trim the crusts off each slice of bread and cut into four equal squares.
- On a square of bread, place approximately 1 tablespoon of shrimp filling in the center, and top with another square. Press the edges to seal.
- Preheat the air fryer to 350°F (175°C) for 3-5 minutes. Spray both sides of each toast with oil and arrange in the basket.
- Cook for 5-6 minutes until golden brown and crispy. Serve warm.
