For the Fried Olives
  • 16 ounces Small Pimento Stuffed Olives Pitted for safety
  • 1 cup Panko Bread Crumbs For a light and crispy coating
  • 1 cup Flour Gluten-free flour can also be used
  • 1 large Egg Can be swapped with buttermilk
  • 2-3 inches Canola Oil For frying, peanut oil can also be used
For the Garlic Aioli
  • 1 cup Mayonnaise Can substitute with Greek yogurt
  • 2 tablespoons Lemon Juice Adds brightness
  • 2 cloves Minced Garlic Fresh preferred
  • to taste Salt & Pepper Adjust to preference

Method
 

Prepare the Garlic Aioli
  1. In a bowl, combine mayonnaise, lemon juice, minced garlic, salt, and pepper. Whisk until smooth and refrigerate for at least 30 minutes.
Fry the Olives
  1. Heat canola oil in a skillet to 325-350°F. Set up a dredging station with flour and panko.
  2. Toss olives in flour, dip in beaten egg, then roll in panko breadcrumbs.
  3. Fry olives in batches for 1-2 minutes until golden brown. Remove and drain on paper towels.
  4. Serve warm with chilled garlic aioli.
