In a large bowl, combine the sliced cucumbers and salt. Toss well and let sit for about 15 minutes to draw out excess moisture.
After 15 minutes, drain any liquid from the cucumbers and gently pat them dry with paper towels.
In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, black pepper, and sugar until well combined.
Add the drained cucumbers, red onion, parsley, and dill to the vinaigrette. Toss everything together until the cucumbers are evenly coated.
Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
Serve chilled or at room temperature.
