In a large skillet, heat the olive oil over medium heat. Add the ground chicken and cook until browned, about 5-7 minutes.
Stir in the garlic powder, onion powder, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes until the spices are fragrant and the chicken is cooked through. Remove from heat.
Preheat your oven to 375°F (190°C).
Lightly spray a muffin tin with cooking spray. Gently press a wonton wrapper into each cup of the muffin tin to form a taco shell shape.
Bake the wonton wrappers in the preheated oven for 8-10 minutes, or until they are golden brown and crispy.
Once the wonton shells are ready, remove them from the oven and let them cool slightly.
Fill each wonton shell with a spoonful of the seasoned chicken, then top with shredded lettuce, diced tomatoes, shredded cheddar cheese, and a dollop of sour cream.
Garnish with chopped cilantro if desired and serve with lime wedges on the side.
