  • 2 tbsp Corn Oil Can swap with vegetable or canola oil.
  • 1 tbsp Sesame Oil Used as a finishing touch.

Method
 

Step-by-Step Instructions
  1. Prepare Noodles: Bring a pot of water to a boil. Soak chow mein egg noodles for 30 seconds to 1 minute until softened. Drain and set aside.
  2. Mix Sauce: Combine dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water in a bowl. Stir until sugar dissolves.
  3. Sauté Aromatics: Heat 1 tablespoon of corn oil in a wok. Add yellow onion and white parts of green onions. Sauté for about 1 minute.
  4. Pan-Fry Noodles: In the same wok, heat another tablespoon of corn oil. Add soaked noodles in a single layer and fry for about 2 minutes until golden-brown.
  5. Combine Ingredients: Return sautéed onions to the wok with green parts of green onions and bean sprouts. Pour sauce over and stir-fry for 1-2 minutes.
  6. Finish & Serve: Remove from heat and drizzle with sesame oil. Toss well and serve immediately, garnished with green onions.
