Step-by-Step Instructions
  1. Make the Avocado Sauce: In a blender, combine half a ripe avocado, sour cream, fresh lime juice, chopped cilantro, salt, and a splash of water. Blend until smooth and creamy, adjusting the consistency with more water if needed. Refrigerate while preparing tacos.
  2. Cook the Turkey: Heat avocado oil in a skillet, sauté onions until translucent. Add ground turkey, cook until no longer pink, then stir in taco seasoning and cook for an additional 2 minutes.
  3. Combine Filling: Stir in drained black beans and green chiles. Simmer on low heat for about 10-15 minutes, stirring occasionally to prevent sticking.
  4. Assemble Tacos: Preheat the oven to 425°F (220°C). Place cheese on one side of each tortilla, scoop turkey filling onto cheese side, and fold tortillas.
