  • 1 medium Onion Chopped, yellow or white
  • 1/2 cup Parmesan Cheese Or Pecorino Romano
For the Roasted Tomatoes
  • 2 tablespoons Olive Oil
  • 2 cups Grape Tomatoes Or cherry tomatoes

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, toss the grape tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes.
  3. Season the chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in a skillet and cook the chicken for approximately 5 minutes per side.
  4. Remove chicken and sauté chopped onions in the same skillet until caramelized. Add minced garlic, pesto, and whipping cream; simmer until thickened.
  5. Return the chicken and roasted tomatoes to the skillet, coat with sauce, and serve over pasta, rice, or zucchini noodles.
