- Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce each one several times with a fork. Bake for 45-60 minutes until tender.
- Allow the sweet potatoes to cool slightly for about 10 minutes. Slice each potato in half lengthwise and scoop out the flesh into a bowl, leaving a ½ inch border.
- In the bowl with the sweet potato flesh, add chopped apples, fresh cranberries, brown sugar, cinnamon, unsalted butter, and salt. Mix until well combined but slightly chunky.
- Stuff the sweet potato skins with the mixture, packing tightly but not overfilling. Place them on a baking sheet.
- Preheat oven to 350°F (175°C) and bake for 20-25 minutes until heated through and cranberries burst.
