Ingredients

For the Sweet Potatoes
  • 4 medium Sweet Potatoes Choose medium-sized, firm ones for that perfect creamy texture.
  • 2 tablespoons Unsalted Butter This adds creaminess and depth, enhancing the overall flavor.
  • 1 teaspoon Salt A pinch helps balance the natural sweetness.
For the Filling
  • 1 cup Fresh Cranberries These add a delightful tartness; you can substitute with frozen if fresh aren’t available.
  • 2 medium Apples (Granny Smith or Honeycrisp) Chop them small for better blending!
  • 1/4 cup Brown Sugar This enhances sweetness, thanks to its rich molasses flavor.
  • 1 teaspoon Ground Cinnamon It brings warmth and a delightful aroma.

Equipment

  • Oven
  • Baking Sheet
  • Mixing bowl
  • fork
  • potato masher
  • sharp knife

Method

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce each one several times with a fork. Bake for 45-60 minutes until tender.
  2. Allow the sweet potatoes to cool slightly for about 10 minutes. Slice each potato in half lengthwise and scoop out the flesh into a bowl, leaving a ½ inch border.
  3. In the bowl with the sweet potato flesh, add chopped apples, fresh cranberries, brown sugar, cinnamon, unsalted butter, and salt. Mix until well combined but slightly chunky.
  4. Stuff the sweet potato skins with the mixture, packing tightly but not overfilling. Place them on a baking sheet.
  5. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until heated through and cranberries burst.
