Method
 

Preparation Steps
  1. Finely shred the green cabbage to a thickness of about 1/8 inch and place it in a large mixing bowl.
  2. Core and dice the apples into small, bite-sized pieces and add them to the bowl with the cabbage.
  3. Mix in the dried cranberries into the cabbage and apple mixture.
  4. Finely chop fresh parsley and sprinkle it into the mixture.
  5. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey (or maple syrup), and Dijon mustard until smooth.
  6. Add the celery seeds, along with a sprinkle of salt and pepper, to the dressing and mix well.
  7. Pour the prepared dressing over the coleslaw mixture and gently toss until coated.
  8. Cover the bowl and refrigerate for at least 30 minutes.
  9. Taste and adjust any seasonings before serving.
