Step-by-Step Instructions for Apple Thyme Jam
  1. Prepare the apples by peeling, coring, and chopping them into small, even pieces.
  2. In a large pot, combine the chopped apples, lemon juice, lemon zest, and apple juice over medium heat. Simmer for about 5–7 minutes.
  3. Stir in the fruit pectin and increase the heat to bring the mixture to a rolling boil.
  4. Once boiling, add all the granulated sugar and chopped fresh thyme, stirring constantly.
  5. Remove the pot from heat and skim off any foam that forms on the surface.
  6. Ladle the hot apple thyme jam into sterilized jars, leaving about a quarter-inch of headspace at the top.
  7. Optionally, add a sprig of thyme to each jar before sealing.
  8. If processing for long-term storage, process jars in a boiling water bath for 10 minutes.
