- Prepare the apples by peeling, coring, and chopping them into small, even pieces.
- In a large pot, combine the chopped apples, lemon juice, lemon zest, and apple juice over medium heat. Simmer for about 5–7 minutes.
- Stir in the fruit pectin and increase the heat to bring the mixture to a rolling boil.
- Once boiling, add all the granulated sugar and chopped fresh thyme, stirring constantly.
- Remove the pot from heat and skim off any foam that forms on the surface.
- Ladle the hot apple thyme jam into sterilized jars, leaving about a quarter-inch of headspace at the top.
- Optionally, add a sprig of thyme to each jar before sealing.
- If processing for long-term storage, process jars in a boiling water bath for 10 minutes.
